I was introduced to his project last year in a event for "Vivent les vins libres" in Marseille and it was the most mind-blowing experience of this fair to me. Their tomatoes distilled is awesome!
The tomato sounds amazing. Juli Reed's South cookbook has a tomato palooza menu, where most every course features tomatoes (she slipped figs & peaches in). Adding this - perhaps as the trou Normande - would make the feast even more amazing.
